Why didn't you fill the second space with N/O/P and the third with T/V/W ?

You may do that if you wish, pwfquestions ! I'd call it a style choice - I personally don't like to use those kinds of triple-options because they look cluttered and confusing to me, so I only do them very rarely. Instead, I would add a notation under those spaces that those are designated for (M)ain and (S)ide dishes, and then leave only the last two spaces with no restrictions.
