I ended up with E as the last one after eliminating the others, but I'm confused how Statistics and World History could both be selected? Is this because the answer doesn't tell us what time Statistics is (9am or 3pm)? Since no other rules are broken and it's not specific to the time, is that why (E) works? Thanks!

Yes, that's exactly right. The "Statistics" ambiguity is one of the challenges of this game that you have to keep an eye on. When they refer to Statistics in an answer choice without telling us what time it is, it could be the 9am Statistics OR the 3pm Statistics. In answer choice E, it could be that the Statistics is the 3pm one, in which case she can take World History and Russian.
