While my general inclination is that this topic might be pushing it a bit, this probably comes down to how well you execute the statement. That's because being a STEM major by itself is not so rare these days, and while it is a helpful positive factor when applying, it's nothing they haven't seen before and so a whole essay on the topic isn't unique by itself. They know what you bring to the table and they understand the grades issue that's often associated with STEM classes as well. That said, any essay that is well done will add to your application and any that isn't well done will take away from it. I could see an essay like this going either way, so it's really more about how you write it than the actual topic. if that makes sense.
