If E was hired on a Monday, then Tuesday would be the earliest day on which B could have been hired, and Wednesday would be the earliest day on which J could have been hired. Does the LSAT use the calendar week starting with SUN or MON? Based on which one they use wouldn't that cause confusion as what the answer would be?

They will let you know if it's needed information, hbaezh. Here it doesn't matter because they aren't asking on which numbered day of the week something occurs, but on which named day of the week something can occur. In this case, once we know that E was hired on a Monday, we want to place each of the other hires as close to Monday as possible. We don't even get to the next Sunday, so we don't have to consider Sunday at all.
